Cupcakes.Can't live without them.




I have a confession to make. Every time I eat a cupcake, whether it's one of mine or somebody else's, I peel back the liner and eat the bottom part of the cupcakes, without the frosting. I know it sounds weird but it's how I decide if the cupcake is a good one.
Frosting can make any cupcake taste good, that's a fact (unless, of course, the frosting tastes really bad).
I reckon eating a cupcake without the frosting is how you know it can stand alone. Be special just by itself and these cupcakes I'm going to share with you certainly are. Sometimes,a good cupcake is all you need to solve your problems.

It's not easy to choose the ultimate cupcake. I mostly go by taste and how easy the recipe is. However, the most important ingredient in a cupcake is the love. And that love comes through the work you put into it. In all cupcake recipes, there are a few things you absolutely must do to get that perfect cupcake (like creaming the butter and sugar really well).
Even so, the cupcake that's ultimate for me, may not be for you. Just go with what tastes amazing and you'll know you've got it right.

  1. I've never made cupcakes with frosting, because I'm just not a big fan of it. I usually bake vanilla cupcakes :) But when I take them out of the oven, they... deflate? I don't know how to say it, but they always become flat :( What am I doing wrong?

    1. Cupcakes do usually deflate a little when you take them out of the oven. That's okay but they should not become too flat.If this happens, it means you are either overworking your cupcake batter or you aren't creaming your butter and sugar properly.
      For a cupcake that is perfectly domed on top, you should beat the butter and sugar really well because this is what incorporates air and helps the cupcakes rise.You should also fold the flour in lightly.
